Caribbean-Style Jerk Chicken Instead of chicken, use 2 blocks of extra-firm tofu, pressed for 30 minutes. Break pressed tofu into chunks and marinate in the jerk sauce for 1 hour. Then shake off any excess sauce and saute the tofu in a pan over medium-high heat until nicely browned.
