Blueberry Sauce

What do pancakes, cottage cheese, and oatmeal have in common? They all taste great drizzled with fresh Blueberry Sauce! This easy, tasty sauce tastes great with so many different breakfast foods and desserts. If you’re feeling daring, you could even try drizzling this sweet sauce over something savory like toast, crackers, or even roast chicken or steak. 

We love sweet, crisp, colorful blueberries mostly because they taste delicious! Plus they’re packed with important nutrients like fiber, vitamin K, vitamin C, and manganese that protect your cells and keep your heart healthy. If you don’t have time to run to the market or blueberries haven’t quite reached their peak yet where you live, frozen blueberries will work fine in this recipe. It’s also easy to double it (or triple it!) for a bigger batch.

  • Slurry:
  • 1 tablespoon cornstarch
  • 2 tablespoons filtered water
  • Sauce Base:
  • 2 cups fresh blueberries, divided
  • ⅔ cup filtered water
  • 6 tablespoons granulated sugar
  • ¼ teaspoon vanilla extract

Grown-up steps
  1. In a small bowl, add the cornstarch and 2 tablespoons of water and mix them together to dissolve the cornstarch. Set this aside for now.
  2. In a small pot, add 1 cup of the blueberries. Then add ⅔ cup of water, the sugar, and the vanilla extract. Heat on medium-high, until the mixture begins gently boiling and the blueberries start to burst.
  3. Pour in the cornstarch slurry and bring the mixture to a rolling boil.
  4. Then turn the heat down to low and simmer for 3-5 minutes, until the sauce feels just right. If you overcook a bit, you can always add a little more water, 1 tablespoon at a time, to loosen up the sauce.
  5. Take the pot off the heat, and gently stir in the remaining cup of blueberries. You can either let your sauce cool completely or serve it up warm over your favorite sweet treat. Enjoy!
