Take a hint from history and use your favorite sliced fruits to decorate this festive dish like your favorite dinosaur or prehistoric beast. These delicious Prehistoric Pancakes use mashed bananas instead of sugar for a naturally sweet and fluffy breakfast treat that will have the whole family roaring with delight. Yum!

Ingredients
- 2 ripe bananas
- ¾ cup plain yogurt
- 1 large egg, beaten
- 1 teaspoon vanilla extract
- ¼ teaspoon salt
- 2 tablespoons butter, melted
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- oil
- sliced fruit
- raisins or chocolate chips

Step-by-step
- In a large bowl mash the banana using a fork or a potato masher.
- Add the yogurt, egg, vanilla extract, and salt. Mix to combine.
- Add the melted butter, flour, and baking powder to the banana mixture and stir to combine. Be careful not to over mix — a few lumps are OK.
- Drizzle 1 teaspoon of oil onto a large pan and heat over medium heat.
- Add 3 tablespoons of batter to the hot pan and use a spatula or spoon to spread it into a small round.
- Once the pancake has puffed up, bubbles form around the edge, and the bottom is golden brown, carefully flip the pancake. Then cook the other side until it’s also golden brown.
- Repeat with the remaining batter adding a drizzle of oil with each new pancake if necessary.
- Place each finished pancake round on a plate. Use sliced fruits to decorate around it and recreate your favorite prehistoric beast! If you like you can even give your creature spots with raisins or chocolate chips. Dig in!
