Ingredients
- 1-2 green bell peppers
- 4 eggs
- 3 tablespoons oil
- ½ teaspoon salt & pepper

Step-by-step
- Cut the bell pepper horizontally into 4 rings about 1 inch thick. Use the larger center rings to cook the eggs.
- Heat oil in a pan over medium heat. Place the bell pepper rings in the pan and cook for about a minute.
- Carefully crack egg into the bell pepper rings, then add salt and pepper. Cover and cook 3-5 minutes, until the yolk has been set.
